Delightfully Chic Goes Under Construction

So I've been MIA the past couple of days and I can't promise tomorrow will
be any different.  If you follow us on Instagram or Facebook you know
that Delightfully Chic is undergoing an exciting transformation.
This week I have been busy working on the new website and
lots of fun things that are in store.

Just hang in there with me...I promise to be back on Monday (if not tomorrow)

Quote of the Week {Weekend Wrap Up}

This past weekend was so much fun!
Scott has put in countless hours over the past month at work
and I could not be more proud of him and the work he does.
Needless to say, when you are on call almost completely around the clock 
date nights are limited.  So finally this past Friday my amazing husband said, 
let's have date night.  He actually was a proper gentleman and asked 
me on Wednesday.  I love that he keeps the romance alive. 
We decided on dinner at Wolfgang Puck as we both had never been. 
Dinner was amazing and I managed to snap this quick pic just before I 
devoured this amazing Margarita pizza that I jazzed up with Pesto and BBQ 
sauce.  Don't judge and don't knock it until you try it! 


 Saturday, Scott and Daddy Gaither had a little father-son bonding and took 
in a car expo in Charlotte and then went to the local cruise in.
 I snapped this pic on their way out to the cruise in as Sweet Mama and I 
hit the streets for more shopping!  We have been having way too much fun lately!

Below is our precious little Baby G's latest ultrasound pics.
I wanted to display them proudly on our refrigerator for everyone to see.
Originally we had the long strip of film sideways (as it wouldn't fit) on the fridge
and I just couldn't handle Baby G being displayed in such a way! haha
So one of my many crafts this weekend was this little darling!

Sunday Scott and I took in our last State Fair as a party of two!
We know that from now on a little one will be joining us!
We can't wait!




You all know my love of goats and this little fella posing so dashingly
kinda made my day!

Scott and I came across this gorgeous pottery that I am completely
obsessed with.  The black/brown detail is actually horse hair.
Kinda amazing right?!



We finished up the weekend with DIY's around the house and 
made a little nursery magic!

Fashion Fix Friday {Over the Knee Boot}

A look I think it’s probably safe to say we are all loving this fall is the ever 
flirty and sultry over the knee boot.

There is just something I think all of us girls experience when we slip into our boots 
and they bring a sense of confidence and chicness to our wardrobe.  
 No matter the heel height they always seem just right!

For the Love of Cooking {Gaither Taco Soup}

Last week I tried a new taco soup recipe. 
It got rave reviews from Scott, however I still feel it needs a 
little tweaking to really be a home run. 

I personally would do less meat, shocker right?!
I put 1lb of ground beef for the hubby, but I felt like a chicken pecking
around the meat.  I also thought it would be even more delish if we added
green and red peppers. I am also toying with the idea of adding yellow rice.
I will have to update yall again on what adjustments I make next time 

For now here is the Gaither Taco Soup that is a home run for  
the meat lovers of the world! 


{What You Will Need} 
1 lb. Ground Beef, browned and drained
1 packet Hidden Valley Ranch Seasoning Mix 1 oz 
(the secret ingredient behind so many recipes)
1 packet Taco Seasoning Mix 1 oz
1 can Beef Broth 14.5 oz
1 can Kidney Beans 16 oz drained
1 can Black Beans 15 oz rinsed and drained
1 can Petite Diced Tomatoes + liquid from can 14.5 oz
1 can Corn + liquid from can 15 oz 
1 can Original Rotel – Diced Tomatoes & Green Chilies 10 oz 


   
Once you have gathered your ingredients you will start
by browning your ground beef.  Drain and place in the crock pot.

 

Next, just start dumping all your ingredients!
Make sure to rinse your black beans.




Give it all a good stir!


 Set your crock pot to low for 4 hours...


Garnish with your favorite toppings .
I went with guacamole, shredded, cheese, sour cream, a 
dash of salt + pepper.  Then break out those addicting 
Tostitos scoop chips and ENJOY!

Quote of the Week {Weekend Wrap Up}

Happy Monday!
What a fun weekend!  Sweet Mama and I escaped to the mountains this
past weekend to take in beautiful fall leaves and a little shopping! 
We started the day off in Boone and had all intentions of eating
at Daniel Boone Inn.  We arrived bright and early, but the wait was still
an hour and we had to STAND, IN LINE, OUTSIDE, in the FREEZING cold!
After about 20 minutes we gave each other "the look" and raced back to the car.
We found this cute little bagel shop, Boone Bagelry and then shopped the streets
of Downtown Boone. 

Of course we had to spend some time in Mast General Store
where Mama went crazy in the preserves department!
I can't point the finger too much, 
I went a little craze in the spice section!  


Next we were off to Curiosity, one of my favorite consignment stores.
On the drive there the leaves kept getting more and more gorgeous 
so we took a detour to the Tweetsie Railroad parking lot to snap a few pics and
do the obligatory selfie! 


Even though the leaves were in their peak color this week we both
still felt like we have seen them even more gorgeous in years past.
We kinda felt like we might have been a day or two late.
BUT, either way, they still provided a 
gorgeous mother-daughter fall moment! 

 Next we made our way to Curiosity!  
If you haven't been you should add it to your list!



 We wrapped things up in Boone and headed to my 
favorite spot!  Downtown Blowing Rock were we had lunch
at Six Pence and shopped the day away. 



 One of my go to shops in Blowing Rock is The Last Straw.
They have the most gorgeous decorations. 



And last but certainty not least, we picked up a new onesie
for Baby G that I am more than slightly obsessed with.
You all know my love for goats right?!  Remember me telling you that "I Gotta a Goat"?!
  Well, now, so does Baby G!  



It was a wonderful weekend!
I am thankful for weekends like this with the most
amazing mother a girl could ever ask for!

Crisp Air Warm Fire

One of my favorite things about fall is the smell of burning leaves and 
firewood.  For as long as I can remember this has been my favorite smell.
The smell brings back the best memories of my parents burning leaves
every fall and brush every spring. 


Scott and I always stroll past the fire-pits on our almost weekly 
trip to Lowe's debating which one we should purchase.
 He likes them simple, and shocker I like them to make a little
bit of a statement. 

I love moments snuggled by a fire wrapped in a warm blanket.
It just doesn't get much better.

For the Love of Cooking {Finding Protein}

Since becoming pregnant one of the most popular
questions this 90% vegetarian is repeatedly asked,

ARE YOU GETTING ENOUGH PROTEIN?

Ugh!  Well I don't know, but I feel like I am?
I eat eggs on most weekends, I  eat hummus pretty often, I try to incorporate 
beans into our meals, and I've even had my burnt to a crisp bacon! 
This is where my 90% vegetarian part comes in!   

But, with all the questioning I obviously start to doubt 
myself.  So, just to be on the safe side I have been searching for
more recipes to help me up my protein so that Baby G is well
taken care of. I came across this recipe and I totally think I can get
on board with it. It's simple, has ingredients I love (minus the onions), and
provides 20 grams of protein!

White Bean Avocado Salad 


 {What You'll Need}
1 can white beans 
1 avocado, chopped 
1 Roma tomato, chopped 
Add 1/4 onion if you’re a fan-I will be skipping  

{Vinaigrette} 
1 1/2 tablespoons olive oil 
1/4 cup lemon juice 
Dried basil to taste 
Garlic powder to taste 
Salt & pepper to taste 
1 teaspoon mustard 

Mix vinaigrette ingredients together and pour over salad. 
Refrigerate for a  couple of hours and serve.

Simple, healthy, packed with protein! 
Sounds like a win to me!
