The Perfect Mocktail for the Holiday's {And Hormones}


I have said over and over again that pregnancy is amazing, and I love every minute of being pregnant! BUT, sometimes you just have days where you feel a touch on the hormonal side.  Today is one of those days!  I know this tiny mood swing will pass quickly, but while I have my hormonal emotional breakdown I can’t help but think…sure would be nice to have a big ole glass of red wine right about now, or wait a gin and tonic, 3 limes please!  Since I have 3 months to go before I can taste those darlings again I thought a mocktail might just do the trick…right?...RIGHT???

While I have my lil moment and can’t even think straight, I turn to Thistle Wood Farms to be my personal mixologist!

Cranberry Fizz Mocktail

What you'll need...
3 ounces of sparkling cider or ginger ale
3 ounces of cranapple juice
Splash of lemon or lime juice
3 tablespoon of sugar and 1/2 teaspoon of cinnamon completely blended  



Rim the class with the sugar and cinnamon mix.

The Gaither: Holiday Simmering Pot


One of my favorite things to do during the holiday season and winter months is to pull together a simmering potpourri that will leave your home smelling of Christmas all day long!


There really is no specific rule as to what you toss into your simmering pot, but for me I like to include oranges, apples, cinnamon, fresh rosemary, fraser fir, cranberries, and oil.


This past Sunday as we were wrapping gifts I knew it was time for our first batch of the season.  So I pulled together what we had on hand.  Cranberries were MIA, but I decided to toss in a pine cone instead.  Something about it just felt right!


A few other tricks of the simmering pot trade:  I like to squeeze the juice of at least half of an orange into the pot and I also like to soak my apples in lemon juice.  This helps to add to the aroma and your apples will not brown quite as fast.

Quote of the Week {Weekend Wrap Up}



Happy Monday! How beautiful was the weather this weekend?! 70° weather in December? Say what?! We spent the weekend in Charlotte catching up with our good friends and met their son, Gavin, who is just shy of 12 weeks old!  It was a nice relaxing weekend with lots of male bonding going on.
 
Be still my heart!  Scott immediately wanted to hold little Gavin.  He is a total natural!

Isaac and Scott did two tours in Iraq together so they have a pretty special bond!

After I told them about 5 or more times, be careful, watch your fingers, and asked should you be wearing safety googles? 
They thought they would be comedians and try to give me a heart attack! 
So not funny!

Brooke and I let the 3 guys prepare dinner for us while we snuggled up on the couch and watched Hallmark Christmas movies. Brooke even shared her tips and tricks on being a mommy that were so needed and much appreciated!
 Sunday we got home just in time to run a few errands and wrap a few Christmas gifts.


This week Scott will be turning 32 and in honor of him, I give you the quote of the week.

From The Gaither Kitchen {4 Simple Holiday Hits}

The holidays are a time to slow down and be in the moment, but we are all guilty of letting things spin into total chaos. For me, that's kinda the fun of the Christmas season. I love the madness of running here and there,  picking up last minute items and pulling together last minute statement making dishes to share with family and friends. So today I thought why don't we try to plan ahead for the craziness that is quickly approaching?! Here are a few appetizers that will win over the crowds at your holiday soirees and require minimal time to prepare.

 

Caramel Toffee Bites with Cream Cheese
So this one actually comes from The Gaither Kitchen.  I prepared this over the Thanksgiving holiday and it was such a hit I've decided to add it to the list for Christmas.  All you need is 8oz of cream cheese, toffee bits, and caramel sauce. I prefer to make my own caramel sauce as it seems to be less sticky. 

Caramel Sauce 
3 Cups Refined Granulated Sugar
1 Cup Water
1 Teaspoon Vanilla Extract
4 tablespoons Salted Butter
¾ Cup of Heavy Cream (add more cream if you wish to have a thinner sauce)
1 Teaspoon Kosher Salt

Spread sugar evenly in the bottom of a clean uncoated 3-4 quart saucepan
Pour in water, and heat over medium. Do not stir. 
Bring to a boil. The sugar will begin to bubble and dissolve.
Watch for the color to change from clear to a golden amber, the caramel should begin to slightly smoke then deepen to a reddish-brown color. Once the mixture begins to change in color, the process moves very quickly so make sure you have all ingredients and utensils in arms reach.
Once it reaches the proper reddish-brown color, immediately remove from heat, and stir in remaining ingredients.
Be prepared for mixture to foam up when you add the whipping cream.
Stir with a wooden spoon until smooth.
You can store the extra caramel in a heat safe glass container in your refrigerator and just reheat (slowly) in the microwave as need. 


How darling is this?! Mason Whitley a former NC blogger who I adore recently posted this pine cone shaped cheese ball covered in almonds and dressed with rosemary and I thought, how perfect for the holiday season! Here is a homemade cheese ball I suggest trying.

 Ok this one, doesn't get any easier!  The presentation speaks for itself.  Just promise me all your holiday parties will have this beauty there! The scent of rosemary alone will be a win!
