I have a major love for risotto and yesterday I had the absolute best dish at Piazza Italia in Durham, NC (Brightleaf area...if you're ever in NC check it out).
Lunch with the ladies couldn't have been better!
Sun dried tomatoes, artichokes, spinach, and capers tossed in risotto...DELISH!
Here's another way to serve risotto up!

That looks amazing. My husband and I were going to be there next Friday for the Red Hot Chili Peppers concert, but the concert was postponed until April. I'll put that on my list, though! YUM.
